Oldums' Boxty

Catherine Leyden provides two twists on the traditional Boxty recipe

Ingredients


Leitrim Boxty
  • 125 g Odlums cream plain flour
  • 1 tsp baking powder
  • 125 g grated raw potato
  • 125 g cold mashed potato
  • good pinch salt
  • a few tablespoons of milk
  • 1 egg (beaten)
  • oil & butter for frying

Donegal Boxty
  • 125 g Odlums cream plain flour
  • 125 g grated potato
  • good pinch salt
  • 1 egg (beaten)
  • oil & butter for frying

Method

Leitrim Boxty
  1. Place the raw potato into a clean tea towel or kitchen paper, squeeze out all the excess liquid (starch).
  2. Place in mixing bowl. Add the remaining ingredients and mix well.
  3. Heat a little oil and butter in a pan and drop spoonfuls of the mixture on hot pan and fry until golden brown on each side.
  4. Serve hot.
Donegal Boxty
  1. Place all ingredients into a bowl and mix well. Heat a little oil and butter in a pan. Drop spoonfuls of mixture on hot pan and fry on each side until golden brown.
  2. Serve hot.
