Jacinta's childhood favourite inspired dish from MasterChef Ireland

Ingredients

  • handful chives
  • rosemary
  • thyme
  • parsley
  • 1 tsp lovage)
  • zest 1 lemon
  • 2 chicken fillets and 2 chicken wings
  • 4 carrots
  • 1 red onion
  • 1 white onion
  • 1 celery stick
  • 1 cup flour
  • 1 cup milk
  • 1 egg
  • pinch of salt
  • 0.5 pint chicken stock
  • 0.5 cup white wine vinegar
  • 2 tblsp brown sugar
  • 2 slices parma ham

Method

  • Preheat Oven to 180°C
  • Marinade chicken for 20 minutes in 2 tablespoon oil, 1 tablespoon vinegar, 1 tablespoon Brown Sugar, Lemon Zest, Salt, Pepper & a teaspoon of each herb
  • Make pancake batter & put in fridge to rest
  • Fry onions, celery and carrots in butter and oil and add a little sugar (until soft then leave aside)
  • Poach chicken fillet in stock for 20 minutes
  • Fry chicken until a little golden
  • Then put in the oven for 10 minutes
  • Take out, sprinkle with brown sugar and lemon zest and cook for 5 minutes
  • Fry Parma until crisp
  • Cook pancake on hot pan
  • Wrap vegetable in pancake, and then hold in place with Parma ham.
  • Slice chicken and dress plate
  • Reduce the marinade juices from pan, pour over and serve.
