Savoury Chicken Pancake

Jacinta's childhood favourite inspired dish from MasterChef Ireland

Ingredients


  • handful chives
  • rosemary
  • thyme
  • parsley
  • 1 tsp lovage)
  • zest 1 lemon
  • 2 chicken fillets and 2 chicken wings
  • 4 carrots
  • 1 red onion
  • 1 white onion
  • 1 celery stick
  • 1 cup flour
  • 1 cup milk
  • 1 egg
  • pinch of salt
  • 0.50 pint chicken stock
  • 0.50 cup white wine vinegar
  • 2 tblsp brown sugar
  • 2 slices parma ham

Method

  1. Preheat Oven to 180°C
  2. Marinade chicken for 20 minutes in 2 tablespoon oil, 1 tablespoon vinegar, 1 tablespoon Brown Sugar, Lemon Zest, Salt, Pepper & a teaspoon of each herb
  3. Make pancake batter & put in fridge to rest
  4. Fry onions, celery and carrots in butter and oil and add a little sugar (until soft then leave aside)
  5. Poach chicken fillet in stock for 20 minutes
  6. Fry chicken until a little golden
  7. Then put in the oven for 10 minutes
  8. Take out, sprinkle with brown sugar and lemon zest and cook for 5 minutes
  9. Fry Parma until crisp
  10. Cook pancake on hot pan
  11. Wrap vegetable in pancake, and then hold in place with Parma ham.
  12. Slice chicken and dress plate
  13. Reduce the marinade juices from pan, pour over and serve.
