Chilli Courgette Lasagne
A fab vegetarian dish with a kick.. creamy courgette with a dash of chillis
Ingredients
- 3 courgettes (grated)
- ricotta cheese
- onions
- fresh chillis
- mushrooms
- 9 lasange sheets
- tomato chilli sauce
Method
- Grate the courgette, fry gently with mushrooms and chilli, after 5 minutes add most of the rototta cheese leaving a bit for the top, and season to taste
- Make up tomato chilli sauce,
- add a tin of tomatoes, a spoonful of sugar and salt and pepper and a spoonfull of chilli flakes.. reduce.
- Layer the courgette mix, with lasagne and tomato sauce and mushroom slices.. you should have enought for three layers ending with a tomato layers, blob on ricotta and salt and pepper
Notes:
You can use a jar of tomato sauce such as lloyd grossmand tomato and chilli.. or If you love garlic, you can replace the chillis with garlic
