Herbed Sardine Humus with Fresh Tomato Bruschetta

A tasty meal from canned foods.


  • for the humus spread:
  • 120 g tin of sardines in oil
  • 200 g tin of chickpeas
  • 1 garlic clove
  • 70 ml olive oil
  • salt and pepper to taste
  • 1 tblsp chopped fresh herbs (parsley and basil)
  • juice of ¾ lemon
  • to assemble:
  • 1 medium baguette
  • 1 garlic clove
  • 2 tblsp olive oil
  • 3 plum tomatoes
  • olive oil
  • seasalt
  • fresh cracked black pepper


  1. Cut 6 pieces of a baguette into 2 inch thick slices.
  2. Place in the oven at 160°C to crisp up yet not toast.
  3. Remove from the oven and rub with 3-4 times with a clove of garlic, then drizzle with a little olive oil and place to one side.
  4. In a food processor whiz up the sardines, chickpeas, garlic, olive oil , herbs, lemon juice and salt and pepper until smooth.
  5. Divide this humus style mix liberally over the each piece of Bruschetta.
  6. Top with 2-3 slices of plum tomato on each.
  7. Drizzle with olive oil, freshly cracked black pepper and sea salt then dig in!
