A great salad dressing.


  • ½ clove garlic (crushed)
  • ½ teaspoon fine sea salt
  • 4 tblsp olive oil
  • 2 tblsp soy sauce
  • 1 lemon juice
  • 1 tsp grated root ginger
  • 20 grinds of the black pepper mill


  • Crush the garlic with the salt.
  • Blend or shake up with all the other ingredients to form an emulsion.
  • If using a liquidiser, there's no need to grate the ginger first - just peel it and cut it into rough chunks.
