- ½ clove garlic (crushed)
- ½ teaspoon fine sea salt
- 4 tblsp olive oil
- 2 tblsp soy sauce
- 1 lemon juice
- 1 tsp grated root ginger
- 20 grinds of the black pepper mill
- Crush the garlic with the salt.
- Blend or shake up with all the other ingredients to form an emulsion.
- If using a liquidiser, there's no need to grate the ginger first - just peel it and cut it into rough chunks.
