A delicious and versatile dip.
- 1 large ripe avocado
- 0.5 vine ripened tomato (diced)
- 0.5 red onion (finely chopped)
- 3 tbs chopped coriander
- Mash avocado (reserving seed) add remaining ingredients and mix well.
- Place the seed back into the dip to help prevent discolouration and refrigerate until needed.
