• 2 large onions (peeled and sliced)
  • 0.5 l beef or chicken stock
  • 2 bay leaves
  • 1 sprig thyme
  • 25 g butter
  • 1 crushed clove garlic


  • Melt the butter in a heavy sauce pot.
  • Add onions, garlic and cook slowly for 10/15 minutes until the onions are golden brown.
  • Add stock, bay leaf and thyme.
  • Season and simmer for 30/40 minutes.
