Cock-a-Leekie Broth with Prunes Soaked in Whisky

One for the winter.

Ingredients


  • 400 g chicken breast (sliced in strips)
  • 4 leeks (washed & chopped)
  • 4 carrots (peeled & chopped)
  • 2 sticks celery (chopped)
  • 2/3 cup pearl barley
  • 8 baby onions (peeled)
  • 1 l chicken stock
  • to garnish:
  • 0.50 cup prunes (chopped and soaked in ½ glass of whisky)
  • 0.50 cup chopped parsley

Method

  1. In a separate pot, blanch the chicken in boiling water. Otherwise, the impurities will foam to the top of the soup. Instead, allow them to separate now, then refresh the chicken in some cold water.
  2. In a large stock pot, bring the chicken stock to a simmer.
  3. Add the celery, pearl barley and onions.
  4. Cook for 15 minutes.
  5. Pour into four warmed bowls and garnish with prunes and parsley.
