A very healthy treat.

Ingredients

  • 115 g non fat plain yogurt
  • 100 g porridge oats
  • 1 large egg (beaten)
  • 50 g vegetable oil
  • 3 tblsp water
  • 140 g self-raising flour
  • 3 ripe mashed bananas
  • 1/2 teaspoon cinnamon
  • 50 g brown sugar

Method

  • Preheat Oven to 200°C.
  • Mix the yogurt, egg, oil and water together.
  • Mix the flour, sugar, porridge oats and cinnamon together.
  • Mix in the wet ingredients to the dry.
  • Add the mashed bananas and fold into the mixture.
  • Spoon the mixture into muffin tins that are lined with paper cases.
  • Cook for 15 minutes - until the top is golden brown and 'springy' to touch
  • Allow to cool.
