Yoghurt and Oat Muffins

A very healthy treat.

Ingredients


  • 115 g non fat plain yogurt
  • 100 g porridge oats
  • 1 large egg (beaten)
  • 50 g vegetable oil
  • 3 tblsp water
  • 140 g self-raising flour
  • 3 ripe mashed bananas
  • 1/2 teaspoon cinnamon
  • 50 g brown sugar
  • 3 ripe mashed bananas

Method

  1. Preheat Oven to 200°C.
  2. Mix the yogurt, egg, oil and water together.
  3. Mix the flour, sugar, porridge oats and cinnamon together.
  4. Mix in the wet ingredients to the dry.
  5. Add the mashed bananas and fold into the mixture.
  6. Spoon the mixture into muffin tins that are lined with paper cases.
  7. Cook for 15 minutes - until the top is golden brown and 'springy' to touch
  8. Allow to cool.
