The classic French vinaigrette.
- 1 clove garlic
- 1 tsp fine sea salt
- 1 tsp sugar
- 20-30 grinds of the pepper mill
- 1 tsp french mustard
- 1 tblsp cider or wine vinegar
- 4 tblsp olive oil
- With the tip of a sharp knife crush the peeled clove of garlic into the salt in the base of your salad bowl.
- Mix in the sugar, pepper, mustard and vinegar.
- When these are amalgamated, stir in the olive oil until you obtain a smooth emulsion.
