A seasonal favourite


  • 7 l water
  • 225 g granulated sugar
  • 2-3 cinnamon sticks
  • 3 oranges
  • 10-12 cloves
  • 2 bottles red wine
  • 1 apple and orange to serve


  • Roughly cut up the oranges and place in a sauce pan with all the other ingredients, except for the red wine. Heat gently until the sugar has dissolved, then bring to the boil, simmer for 30 minutes, and strain. (The syrup can be made up to this stage and then stored in the fridge until required.) ;
  • To serve, return the syrup to the pan, bring to boiling point, add the wine and slice of apple and orange and serve.
