Standard French Dressing

The classic French vinaigrette.

Ingredients


  • 1 clove garlic
  • 1 tsp fine sea salt
  • 1 tsp sugar
  • 20-30 grinds of the pepper mill
  • 1 tsp french mustard
  • 1 tblsp cider or wine vinegar
  • 4 tblsp olive oil

Method

  1. With the tip of a sharp knife crush the peeled clove of garlic into the salt in the base of your salad bowl.
  2. Mix in the sugar, pepper, mustard and vinegar.
  3. When these are amalgamated, stir in the olive oil until you obtain a smooth emulsion.
