A simple and quick dish from Martin Shanahan.


  • 1 trout
  • 2 knobs of butter
  • 1 bowl of peas
  • 1 tea spoon of sugar


  • Add a knob of butter and a spoon full of sugar to the peas and simmer. Make sure your pan is hot, skin the Trout and season the fish with some salt and add to pan until there is a crisp coating on the trout.
  • Serve with some potatoes and peas to the side.
