  • for the pastry:
  • 100 g unsalted butter
  • 100 g icing sugar
  • 225 g flour
  • 1 egg lightly beaten
  • 1 egg yolk
  • for the filling:
  • 6 passion fruit
  • 125 g caster sugar
  • 3 eggs
  • 100 ml double cream


  • Make pastry, bake blind and then brush with egg yolk and leave to cool. This will stop the pastry from getting soggy.
  • Scoop out passion fruit and push through a sieve. Discard the seeds.
  • Whisk sugar and eggs till sugar has dissolved, very thick. Whisk in cream and passion fruit pour into pastry case and bake at 120°C until just set.
