Spicy Mexican Marinade

Perfect for spicing up a summer barbeque.


  • 3 garlic cloves (finely chopped)
  • 1 tblsp chilli powder (mixed to a paste with a little water)
  • 1 tblsp paprika
  • 1 tblsp paprika
  • 1 tsp ground cumin
  • ½ teaspoon dried oregano
  • 2 tblsp beer or tequila
  • juice of 1 orange and 1 lime, or 3 tablespoons pineapple juice
  • 2 tblsp olive oil
  • 1 tblsp chopped, fresh coriander
  • sea salt, to taste


  1. Combine all the ingredients in a dish large enough to take whatever you want to marinate.
  2. Add the food and turn to coat completely. Leave to marinate.
