Passion Fruit Tart

Ingredients


  • for the pastry:
  • 100 g unsalted butter
  • 100 g icing sugar
  • 225 g flour
  • 1 egg lightly beaten
  • 1 egg yolk
  • for the filling:
  • 6 passion fruit
  • 125 g caster sugar
  • 3 eggs
  • 100 ml double cream

Method

  1. Make pastry, bake blind and then brush with egg yolk and leave to cool. This will stop the pastry from getting soggy.
  2. Scoop out passion fruit and push through a sieve. Discard the seeds.
  3. Whisk sugar and eggs till sugar has dissolved, very thick. Whisk in cream and passion fruit pour into pastry case and bake at 120°C until just set.
