- 100 g roquefort
- 150 g softened unsalted butter
- 1 tblsp chopped fresh parsley
- freshly ground black pepper
- Whizz all the ingredients in a blender or food processor, then scrape out onto a piece of foil.
- Shape into a log and roll up in the foil, then chill until required.
- Variation: Roquefort and Green Peppercorn Butter – simply stir 1 tablespoon crushed green peppercorns into the Roquefort butter.
