Lebanese Lamb with Fattoush and Aoli

A traditional Lebanese dish that is easy to prepare.

Ingredients


  • lamb:
  • 1 large lemon
  • 1 small teaspoon sugar
  • 2 tblsp olive oil
  • 1 garlic cloves
  • pinch of ground cinnamon and ground cumin
  • 4 rib lamb chops
  • fattoush:
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic
  • salt and pepper to taste
  • 1 cup shredded romaine lettuce
  • 1 small cucumber (diced)
  • 1 cup fresh tomatoes (diced)
  • 1/4 cup chopped parsley
  • 1/8 cup chopped mint leaves
  • 1/2 green pepper (diced)
  • 2 scallions (finely sliced)
  • 1 tsp sumac
  • 1 piece of pita bread
  • aoili:
  • 2 egg yolks
  • 6 garlic cloves (minced)
  • 2 tblsp lemon juice
  • 3/4 cup olive oil
  • salt to taste

Method

  1. Grate 2 tsp zest and juice lemon. Crush garlic to a paste with 1/2 tsp salt, then stir together with the grated zest, juice, oil, and spices. Rub all over lamb chops and leave to marinate.
  2. For the Aoili: Combine egg yolks and garlic in blender. Blend in lemon juice. Gradually pour in oil in thin stream until blended and aioli has consistency of thick mayonnaise. Add salt to taste.
  3. Mix the Fattoush in a mixing bowl.
  4. Preheat grill at medium-high heat.
  5. Grill chops, turning once, about 6 minutes total for medium-rare. Transfer to a plate and let rest, loosely covered, 5 minutes.
