  • 5 whole eggs
  • 100 ml milk
  • salt and pepper
  • fresh herbs (thyme and tarragon)
  • 4 cooked potatoes
  • 1 sliced courgette
  • 1 chopped red onion
  • 2 tblsp grated parmesan
  • olive oil
  • to serve:
  • sliced cooked ham
  • local cheddar
  • smoked salmon
  • marinated globe artichokes
  • cornichons
  • caperberries


  • Whisk the eggs in a bowl with the milk, salt and pepper.
  • Gently fry the onion in the olive oil until slightly softened but not coloured.
  • Add the courgettes and fry for a further 4 to 5 minutes until softened.
  • Add the herbs and mix.
  • Add the chopped or sliced cooked potatoes.

  • Season with salt and pepper.
  • Pour the egg mix over the vegetables.
  • Grate the parmesan on top and bake at 165°C for 15-20 minutes until just set and golden.
