Courgette Frittata

Try something different with this Courgette Frittata recipe.


  • 5 whole eggs
  • 100 ml milk
  • salt and pepper
  • fresh herbs (thyme and tarragon)
  • 4 cooked potatoes
  • 1 sliced courgette
  • 1 chopped red onion
  • olive oil
  • 2 tblsp grated parmesan
  • to serve:
  • sliced cooked ham
  • local cheddar
  • smoked salmon
  • marinated globe artichokes
  • cornichons
  • caperberries


  1. Whisk the eggs in a bowl with the milk, salt and pepper.
  2. Gently fry the onion in the olive oil until slightly softened but not coloured.
  3. Add the courgettes and fry for a further 4 to 5 minutes until softened.
  4. Add the herbs and mix.
  5. Add the chopped or sliced cooked potatoes.
  6. Add the chopped or sliced cooked potatoes.
  7. Season with salt and pepper.
  8. Pour the egg mix over the vegetables.
  9. Grate the parmesan on top and bake at 165°C for 15-20 minutes until just set and golden.
