Derry Clarke shows you how to prepare a noodle salad with a spicy kick as part of 'Eat Smart Week'.


  • 200 g cooked noodles
  • 100 g bean sprouts
  • 1 cucumber (diced)
  • 1 tblsp chopped mint
  • 1 tblsp chopped coriander
  • 4 red chillies (de-seeded and finely diced)
  • 2 lemons (juice)
  • 2 tblsp soy sauce


  • Toss all ingredients together, and season to taste.
