- 4 herrings
- 75 g coarse oatmeal
- sea salt and black pepper
- 50 g butter (mixed with 1 tablespoon olive oil)
- Clean and gut the herrings.
- Mix the oatmeal with plenty of sea salt and black pepper, coat the herrings with this mixture.
- Melt the bacon fat in a pan and fry the herrings until they are crisp and brown.
- Serve with lemon wedges and garnish with parsley.
