Rhubarb crumble with custard

From episode three of MasterChef Ireland 2012


  • 2 cup flour
  • 1 cup caster sugar
  • 200 g butter
  • 3 eggs
  • 100 ml double cream
  • vanilla pod
  • 2 stalks rhubarb
  • 100 g crystalize ginger
  • lemon rind of half lemon
  • 50 g almond


For the custard
  1. Mix the egg yolks with ½ cup of sugar and vanilla pod. Whisk in the cream over medium heat until thick
For the crumble
  1. Sauté the rhubarb in the pan with lemon rid, half cup of sugar and crystallised ginger.
  2. To make the topping mix the butter with flour and caster sugar until breadcrumb like.
  3. Then mix in the almonds. Place on top of the rhubarb and place in oven at 180° for 20 minutes.
  4. Serve with custard
