In Donal's own words,  'I’m a self taught home cook who writes and photographs food for a living. I’ve been cooking from an early age and inspired by a family of foodies, food quickly became a way of life. Good Mood Food was released in October 2009. The success of the book lead on to the world of TV and radio appearances which include Ireland AM, The Afternoon Show, ICE, Nationwide and Market Kitchen in the UK, The Ian Dempsey Breakfast Show and The Tubridy Show. My brand new book Kitchen Hero was released in March 2011 and a the 13 part television series which accompanies it airs in May 2011.  I write a regular column for the Irish Independent Weekend Magazine and a weekly column in The Cork News. Donal will return to our screens later this year in a brand new series.

  • Crazy Monkey Brownie Baked Alaska - When my dad was growing up, my granddad took him and his brothers and sisters to Dublin Zoo on a cold winter's day. They had brought bags of bananas and monkey nuts to feed the monkeys and were throwing the food over the iced enclosure. One stray banana landed on the ice and suddenly the monkeys realised they could walk across the ice, leading them to charge my granddad and his kids, attacking them for the food. Hence the inspiration for this nutty baked Alaska...
  • Chilli and Lemongrass Chicken - This is a wonderfully fragrant dish that is very easy to prepare. I use chicken thighs here as they have more flavour, but you can easily use chicken breasts instead. The paste made for the sauce can also be used with beef or pork.
  • Beer Batter Fish with Pea Mash and Rosti Potato Cakes - This has to be one of my absolute favourite dinners. It's basically fish and chips, but with a great twist, using crispy rosti potato cakes instead of the more laborious chip. I shallow fry my goujons rather than using a deep fat fryer, with oil I keep in a bottle specifically for this purpose. When you're done and the oil is cold, just fill the bottle up to use again next time.
  • Surf & Turf Salad - Chimichurri is a tangy and fresh Argentinian sauce. It can be made very easily and is the perfect accompaniment to grilled meat and seafood. This is a mighty feast, which is also quite healthy.
  • Howth Head Seafood Chowder - My home town of Howth is famous throughout Ireland for its fish. Along the west pier there are plenty of fishmongers to choose some of the freshest fish for supper. This wonderfully creamy seafood chowder always reminds me of home and with a few slices of brown bread with Irish salted butter, I'm there in an instant.
  • Raspberry Goddess Pie - This slightly unusual rough and ready pie uses crème fraîche and raspberries as its filling and makes a wonderful summer-time dessert.
  • Red Cabbage and Carrot Coleslaw - The coleslaw should last 2-3 days if kept in the fridge.
  • Moroccan Chickpea Burgers - Decent burgers from store-cupboard ingredients, who’d have thought? I love these little Moroccan veggie burgers – they have a great, nutty flavour.
