This is a really easy American 'fat' pancake recipe that you can add any fruit you have to.
Numerous health benefits are buckwheat's prime claim to fame. Firstly, it does not contain gluten, so it makes an excellent substitute for other grains in the diet. These pancakes are much sweeter and wholesome than regular pancakes. They are a family favorite.
Boxty potato pancakes are a traditionally Irish recipe and they come with a great little rhyme that we were taught when growing up: ‘Boxty on the griddle, boxty on the pan, if you can’t bake boxty, sure you’ll never get a man.’ The traditional recipe varies from region to region, but they all use grated raw potato. This is the version that my family makes and they are great with a full Irish breakfast, or I also serve them with pan-fried mackerel and a light salad.
This cake is delicious. It keeps very well for a few days. The recipe can be doubled to make two cakes then sandwiched together with fresh cream and berries to make a celebration cake or just cut in squares and enjoyed as brownies.
