Traditional soda bread with healthy addition of omega 3 rich linseed.
This is, if I do say so myself, a fantastic dessert! It looks very sophisticated yet quirky and tastes absolutely divine. It makes a great dinner party dessert and you can have the entire dessert assembled in advance and then just bake it when it is required. Bear in mind that you can alter this recipe to use up other bits and pieces you have lying around.
Roasted squash produces wonderful soups with a velvety consistency when blitzed smooth. The addition of coconut milk adds a creamy and exotic flavour, but if you don’t want to use it, you could replace with vegetable stock. This is a warming soup, ideal in autumn and winter. Serves between four and six people.
There are a few vegetables I can grow without fail and thankfully one of them is the mighty beetroot, which roasts beautifully and is a great addition to this lentil salad. This dish makes a nice lunchtime dish and is excellent in lunchboxes.

One of my guilty pleasures is a tin of boiled condensed milk (dulce du leche). If you want to make your own, boil unopened tins of condensed milk for 2 hours. I like to prepare a few at a time and then keep them in the cupboard where they will store for months!
A tasty vegetarian salad.
