All that’s good about west Cork can be found in this dish. It’s my west Cork version of surf and turf, so I’ve stolen some of Paul’s beloved black pudding to make it! Make sure your scallops haven’t been dredged, as that is disastrous for the sea bed.

I make these eggs in the morning whenever we’ve had any late-night guests who decided to stay over. They make a really funky and filling brunch.
Shop-bought muffins are a bugbear of mine, full of sugar and very high calorie! They are really cake without the icing. Definitely not a good breakfast option or a lunchbox filler! These muffins get a fibre boost from apples, carrots and oats, all good sources of healthy carbohydrates too! The recipe uses natural sweeteners like apple, raisins and nutmeg and less sugar. Ideal for breakfast or as a lunchbox treat.
This is my favourite way to have salmon and is packed with flavour. Make sure to give this one a go!!
