This is a sort of Scottish version of Minestrone, actually, again using what is available and just like Minestrone it can be made into more of a meal than a soup.
A healthy, filling meal that won't break the bank.
This can than be used in so many different ways and will keep for a few days or freeze. It can be used with fish like monkfish or prawns or again with bits of chicken left over, with a nice bit of Foccacia to go with it.
Fire up the coals to enjoy that bit of summer with a BBQ dinner.
