I like to just leave all the components of the meal in the middle of the table and allow all of the guests to help themselves and build their own fajita. The stir fry part of this recipe is also suitable for pork, duck or beef.

I remember staying in an old Irish guesthouse when I was growing up, where a dessert trolley was rolled around the dining room after dinner and you could pick a dessert of your choice. I could never resist creamy profiteroles smothered in a warm, thick chocolate sauce.
Paul says: "This is a lovely way to eat fresh fish... Fish can be quite tricky to cook on a barbecue as it sticks really easily. So to remove any fear I'm cooking the mackerel on a foil tray. Just treat it like a frying pan. If you're feeling brave however, just brush the fish with a little oil and make sure the bars of the barbecue are really clean".
