Quesadillas with Parma Ham, Sundried Tomatoes, Cheese & Jalapeño Pepper Relish
Quesadillas are simply browned tortilla wraps with cheese and a selection of your favourite ingredients. In these quesadillas, I added some Ballymaloe Jalapeño Pepper Country Relish which gives them a real kick!

Churros French Toast Fingers
Churros, also known as the Mexican doughnut, are deep fried cylindrical shaped pastries. These are often served with cinnamon sugar and a chocolate dunking sauce. I don't like deep fried foods, so I have adapted good old fashioned French toast and given it a churros ish twist. I've added a bit of orange to complement the cinnamon and chocolate. An ooey gooey messy dessert, great fun for kids to make-chocolate everywhere!

Slow-cooked Meaty Chilli

Hearty food like this meaty chilli makes me very happy inside; it’s full of great spices and filling ingredients, and best of all it feeds a crowd. Using finely chopped meat here rather than mince gives a really interesting texture to the chilli.
