Mixed Beans Soup with Potatoes

From: Today

This is a very hearty dish, full of nutrients. We celebrate a special day in August called Janai Purnima, when every Nepalese household makes sure to cook this dish in their kitchen. Mixed dried beans need to be soaked overnight or at least for 8 hours. It is great as a very healthy, nutritious and filling lunch or dinner.

Lamb Curry

From: Today

This is a very traditional way of cooking lamb curry in my parents' house. I love the combination of lamb curry, rice and chargrilled tomato chutney. In Nepal, generally, goat meat is more popular than lamb meat but coming to Ireland, I prefer lamb meat to goat as I find goat meat is a little tougher than lamb. We cook any meat - even fish - on the bone as bone adds much deeper flavour to the dish and acts as a natural stock. You won't get that from off-the-bone meat, especially in any curry dishes. Lamb curry is great as leftover, too.

Chicken and Vegetable Noodles

From: Today

In Nepal we eat a lot of noodles due mainly to the Tibetan influence on our cooking, however this dish is popular all over Nepal, not just in the parts which border Tibet. As a one-pot dish this is a very convenient easy dish as well as being healthy and nutritious. Please don't be put off by the long list of ingredients as many of these are store cupboard items and you do not need to include every vegetable mentioned. I think these noodles are best served hot or warm but I do have some friends that like to serve this as a cold salad on picnics or for lunch.

Tomato Chutney

From: Today

This is a very popular dish which goes very well with pilau rice. I use this as a bread or wrap spread for cheese and ham sandwiches which gives that extra flavour and variation to the ordinary sandwich! You can even use this dish as a sauce for your pasta or spaghetti.

Chicken Pulao

From: Today

I grew up enjoying this simple but tasty rice dish which my mom used to make now and then when she was in a good mood. This is a very simple dish to impress your guests instead of plain rice with some side dishes or relish. It is a very wholesome and tasty dish which you can easily enjoy on its own as your simple dinner.

Red Cabbage Salad

From: Today

Cabbage is cheap, versatile and keeps well in the fridge. I particularly like red cabbage and I find this recipe a great way to add flavour and character to what is after all a very inexpensive vegetable. This simple recipe is one of my favourite quick meals to serve to my family with the added bonus that it is also healthy and nutritious. This works well with any Nepalese or western meal but I like it best with some quick Nanglo Chicken and Naan Bread.
