Fish is often forgotten as the ultimate fast food. It is an incredibly quick cooking ingredient and I would normally wax lyrically about just how healthy it is, too. But not in this recipe. No, this recipe is all about the nutty golden brown butter that forms the sauce alongside the tang of lemon juice and the salty hit from the capers. It's a bit of an all-in recipe and if you're going to make it, serve it with some steamed veggies for a delicious dinner.

Butterflied Rosemary Chicken with Romesco Sauce and Simple Steamed Greens

Romesco is a fantastic Spanish pepper and nut sauce or salsa, which is a wonderful addition to grilled meat or fish. There are many variations, but essentially you are looking for a sweet, spiky, smoky relish. It's a super accompaniment to my butterflied chicken breasts and steamed greens.

When I was growing up, if Mikado biscuits were in the house, they didn't last long. This cake is a small homage to them with a light sponge layered with jam, covered with a sweet marshmallow frosting and decorated with desiccated coconut.
