I never reallly enjoyed porridge until I moved to Ireland, now I love it for breakfast with fruit and yoghurt. The Irish soil and climate produces highly nutritious, good quality oats. The grains fluff up really well and have a lovely texture, not boarding school gloop
This makes a delicious and quirky starter for a dinner party, but is also suitable for children's school lunchboxes or picnics. Although the recipe suggests pancakes, you could do something like this using tortilla wraps instead. They are also a fantastic canapé to serve with drinks.
Numerous health benefits are buckwheat's prime claim to fame. Firstly, it does not contain gluten, so it makes an excellent substitute for other grains in the diet. These pancakes are much sweeter and wholesome than regular pancakes. They are a family favorite.
