Kevin’s Christmas Turkey

From: Kevin Dundon's Christmas Made Easy

There is something wonderfully satisfying about putting a beautiful turkey sitting in the middle of the table on Christmas day and serving your salivating family. If cooked properly the turkey can be a deliciously moist bird which can be enjoyed by all the family. Plan every aspect of your Christmas cookery carefully and meticulously and then you can relax a little more on the actual day.

Mum's Roast Potatoes

From: Kevin Dundon's Christmas Made Easy

This is my Mum’s recipe and they’ve never failed me. There’s no doubt that the fat from the roast meat makes the best roast potatoes. Alternatively if you ever roast a goose or duck save every drop of the fat and freeze it down in ice cube trays, then bag it to use at your leisure – even a couple added to your oil will help the flavour.

Slow-cooked Meaty Chilli

From: Kitchen Hero: Great Food for Less

Hearty food like this meaty chilli makes me very happy inside; it’s full of great spices and filling ingredients, and best of all it feeds a crowd. Using finely chopped meat here rather than mince gives a really interesting texture to the chilli.

‘Goes a Long Way’ Beef Skirt Goulash

From: Kitchen Hero: Great Food for Less

Goulash was one of my mom’s regular dinners when I was growing up, and I loved it. The addition of dumplings is my own twist.

Dad’s Braised Oxtail

From: Kevin Dundon's Christmas Made Easy

Any time you ask my dad about food he always brings up oxtail. I’m fairly sure it would be his dessert island dish. When he tried out this recipe, he told me it was "bloody great!" so I think it got his seal of approval! If you haven’t cooked oxtail before the aim is to cook them until the meat just falls off the bone. I serve mine sitting proudly on top of some creamy colcannon mash.
