Catherine's weekend dinner recipe, use with the best of Irish ingredients.
Drizzle on salads and prepare to be amazed by how simple they are, but what a punch they pack!
Garnish with fresh coriander.
To serve, place a lettuce leaf on your plate, top with the pickled vegetables and chicken. Fold over the lettuce and enjoy.
