This recipe comes from my Aunt Erica, and is adapted from her fairy cake recipe. If you are making these for the kids to decorate and you want to limit the time it takes put everything together, it may be easier to make the cupcakes in advance and then get the kids to decorate them later on.

This recipe makes the most gooey, decadent chocolate brownies imaginable. A word to the lads: if you have annoyed your missus, a tray of these will go a long way to patching things up. With chocolate as the mortar. The frozen raspberries work brilliantly as they stay whole during the baking process, adding bursts of pink tartness in the slab of chocolatey goodness.
This cake is delicious. It keeps very well for a few days. The recipe can be doubled to make two cakes then sandwiched together with fresh cream and berries to make a celebration cake or just cut in squares and enjoyed as brownies.
These brownies are made from three different chocolate varieties with a mixture of dark, milk and white chocolate. The chocolate I used was O' Conaill's Cork chocolate but Valrhona or Lindt are more readily available in your local supermarket or chocolate shop.
