Eunice Power cooks up delightful frittata - perfect for a quick dinner.
A dazzling combination of flavours.
Dungarvan Brewing Company's Black Rock Stout is perfect for slow cooking. I love this stew: it's wholesome, healthy and rich. The stout is made from roasted barley which gives a rich, chocolate-y flavour. Best of all, it is brewed in Dungarvan.
Serve with softly whipped cream.
This is all the more delicious with the introduction of feta cheese, which is undoubtedly one of the most famous Greek cheeses. The salty, tangy flavour of feta pairs beautifully with the rich lamb sauce and is crumbled over the béchamel sauce. This dish is best prepared and cooked the day before; allow the flavours to infuse and then reheat the next day.
Served with turnip and potato mash and buttered cabbage
A great feed.
January is a long month and the sugar-free good intentions can be put aside for a week or so, allowing us to nourish ourselves. I recently bought three ginger roots, great big sprawling things that resemble the hands of a hard working man - the ultimate healing hands, which, when grated and added to boiling water for ginger tea with honey and lemon, or used in soups, cakes, breads or stews, will sooth and revive the body and spirit. The following cake is just what the doctor ordered. Lots of healing ginger, warming cinnamon and cleansing lemon with an egg thrown in for good measure!
The Chilli and Garlic One Pan Rice Meal is quick and easy to rustle up and makes a great family dinner. A succulent chicken and not-too-spicy rice dish. Just throw in your choice of crisp vegetables, simmer and drizzle in some tangy garlic and chilli sauce.
