Serve with Crème Anglaise and brandy cream.
Serve in slices to accompany turkey.
Mash vegetables and add the buttermilk or cream and beat to produce a smooth purée.
Steep the ham overnight. Calculate the cooking time, allowing 20 minutes per lb (500g).
This may be served hot or cold and can be reheated very successfully. It may also be frozen.
Garnish with a piece of lemon or lime and a crab claw.
Any mixture of fish may be used. Salmon and smoked salmon may be used with white fish - cod, haddock or hake.
