In Donal's own words, 

'I’m a self taught home cook who writes and photographs food for a living. I’ve been cooking from an early age and inspired by a family of foodies, food quickly became a way of life.

Good Mood Food was released in October 2009. The success of the book lead on to the world of TV and radio appearances which include Ireland AM, The Afternoon Show, ICE, Nationwide and Market Kitchen in the UK, The Ian Dempsey Breakfast Show and The Tubridy Show.

My brand new book Kitchen Hero was released in March 2011 and a the 13 part television series which accompanies it airs in May 2011.  I write a regular column for the Irish Independent Weekend Magazine and a weekly column in The Cork News. Donal will return to our screens later this year in a brand new series.

If you find the thought of making homemade pasta daunting, gnocchi is a good stepping-stone. You could use store bought gnocchi, though, if you don't feel up to it. Either way, the combination of golden gnocchi nuggets with creamy mozzarella, sweet garden peas and a drizzling of flavoured butter is a breath of summer air. This makes a superb starter or a light supper.

Affogato is good at any time of year and it is an incredibly easy dessert to prepare. Choose the best vanilla ice cream you can find and make sure you use good, strong espresso (regular brewed coffee will not work here). The recipe for the biscotti makes about 30 but they keep very well in an airtight container.

These mini banana bread loaves are deliciously moist and are extremely easy to throw together. I've added some chocolate chips to this recipe but you could use some toasted chopped nuts instead if you prefer. This recipe will also fill a 900ml loaf tin and will take about 50 minutes to cook in the oven.

This simple but very tasty tart makes an elegant dinner party starter served with some lightly dressed bitter leaf salad. This savoury tart is a wonderful way to celebrate a mature Cheddar cheese and pared with the caramelised onions is a match made in heaven!
