Without any formal catering college training, Oliver Dunne (born 1977) began his foray into the world of kitchens and restaurants as a Commis Chef at Gotham Café on South Anne Street, Dublin. From here he progressed, trained and enhanced his skills at The Peacock Alley, QV2, The Clarence Hotel and Roly’s Bistro, before making his move to London.
During his time in London, Oliver worked for Gary Rhodes, Gordon Ramsay, Chef Anthony Demetry and with Shane Osborne.
In 2003, Oliver returned to Dublin, opening Mint in Ranelagh as the Head Chef, and within 6 weeks the restaurant was awarded Ireland’s ‘Best New Restaurant’.
In 2006, Oliver took over Bon Appetit, winning his own Michelin Star in 2008. Oliver is the youngest Michelin Star Chef in Ireland.
