100g | 4oz butter100g | 4oz light brown sugarfinely grated rind of 1 large orange8 tablespoons brandyBeat the butter, sugar and orange together with an electric whisk until light and fluffy. Slowly add the brandy, little by little, beating well all the time until it's smooth and creamy. Be careful not to add the brandy too quickly, or the mixture will curdle. Spoon the butter into a serving dish and chill until you want it.
