The Galway International Oyster and Seafood Festival takes place every year the last weekend in September.
Here is a look at the 1995 event, when it had a place in Europe's top 10 festival league. Visitors travelled from as far way as the Australian Outback and Canada. According to reporter Jim Fahy, the entire city revelled in the tourist bonanza. As Mayor Michéal Ó hUiginn put it,
It's got style, it's got class. There are huge crowds here. It must be worth about £3 million to the city and it just gets Galway onto the world map once again.
The highlight of the festival is the World Oyster Opening Championships. In 1995 the winner was Galway's own challenger, Vincent Graham.
