Here are some Christmas meat recipes from the RTÉ Guide, published in an 8-page cooking supplement on 28 November 1969.The one above is for ham baked in cider and the two below are for turkey soufflé and turkey and ham vol-au-vent. The recipes are from Jimmy Flahive, the Aer Lingus chef who traditionally did the Christmas cooking supplements for the RTÉ Guide at this time. Jimmy also had a cookery slot on the Telefís Éireann programme 'Home Truths' (1966-68). The drawings are by Alan Corsini, the RTÉ Guide's graphic designer.
