    It was Festival Friday on the show! And we had great live music from the Original Rudeboys, and some delicious food from Louise Lennox

    Here are the yummy recipes that Louise made for us today....

    BBQ S’Moore Whoopie Pies

    Ingredients

    300g self-raising flour

    2 teaspoons bread soda

    40g cocoa powder

    75g dark chocolate - melted

    180g caster sugar

    1 large egg

    50ml sunflower oil

    70ml boiling water

    125ml buttermilk

    Filling

    10 large marshmallows

    10 squares Cadburys caramel

    Method

    Preheat oven 170ºC

    Sieve self-raising flour, bread soda and cocoa powder together. Put all the ingredients for the whoopee pie into a large bowl and whisk together.

    Line two baking trays with baking parchment. Put 10 spoons of the mixture on each tray. Leaving plenty of space in between.

    Bake for 12- 15 minutes until tops are puffed up and the cakes spring back when touched. Carefully remove the whoopee pies from the tray. Cool on a wire rack.

    Cut the marshmallows in half and stuff with a piece of caramel. Sandwich marshmallows together with a stuffed marshmallow. Place in a foil tray, cover with tin foil. Cook on the BBQ away from the direct flame until the marshmallows and caramel begin to melt.

    Eat at once.

    Phad Kaprao Gai – Thai style chicken with holy basil

    Ingredients

    2 large chicken breasts, minced or finely chopped

    2 tablespoon vegetable oil

    5 cloves garlic – thinly sliced

    Headful green beans – thinly sliced

    2-3 hot chillies – thinly sliced

    8 holy basil leaves (use regular if you can’t get this basil)

    1 tablespoon fish sauce

    1 tablespoon oyster sauce

    ½ teaspoon palm sugar or brown sugar

    2 spring onions

    3 tablespoons water.

    Method

    Pour the oil into a wok on a low heat. When the oil is hot add garlic, spring onions and chillies.

    Cook for two minutes then add the chicken. Increase the heat and cook for 4 more minutes.

    Add the beans, fish sauce, sugar, oyster sauce and water and cook for 2 more minutes.

    Add in the basil leaves and serve.

    Charity Shops

    The chief executive of Fundraising Ireland has said charity shops should at the very least be allowed to apply for planning permission to open on Grafton Street. Anne Hanniffy said charity shops were more popular
    than ever during a recession. She said charity shops should be able to decide whether or not to open on Grafton Street if they were able to pay the rent."Fundraising Ireland agrees that charity shops should adhere to the rules and regulations and comply with the planning permission," she said."But the point is they're not even be allowed apply for planning permission, and that's really important. As I said, they are a legitimate source of business, they increase footfall." Why do you think charity shops are not allowed on Grafton Street? Is this simply a matter of snobbery?
